Healthy Kidney Meals by Renalogic

As part of our ongoing commitment to improving health and well-being for those diagnosed with chronic kidney disease (CKD) or those at high risk, we’re excited to share this recipe that is delicious and kidney-friendly.

We’re featuring Chicken Fingers. This recipe is designed to suit individuals at various stages of CKD, including those who have undergone a kidney transplant. It’s also great for people diagnosed with diabetes. Let’s dive in and discover how you can prepare this tasty and nutritious dish at home.

Meal, Appetizer: Chicken Fingers

Total Preparation Time: 4 hours 40 minutes

Great for people with the following conditions: Diabetes, CKD Stages 1, 2, 3, 4, 5, Dialysis & Kidney Transplant.

Needed Ingredients:

  • pounds of chicken breast, cut into 3 by 1-inch pieces
  • 16 oz. container low-sodium, low-fat, Greek yogurt
  • 1 cup all-purpose white flour
  • 1 egg, whisked
  • 1 cup crushed wheat cornflakes or no-salt added corn chips
  • ½ cup lemon juice
  • ¼ teaspoon dried dill
  • ¼ teaspoon dried celery seed
  • ¼ teaspoon salt-free garlic powder
  • ¼ teaspoon dried lemon peel
  • ¼ teaspoon freshly ground black pepper
  • Olive oil spray

Preparation Instructions:

Preparation Time: 40 minutes

Cook Time: 4 hours

Mix the chicken with yogurt and lemon in a mid-sized container. Rub all the ingredients together so the chicken is completely covered in yogurt and lemon. Cover the container and place it in the refrigerator for a minimum of 3 hours.

When you’re ready to start baking, preheat the oven to 400 degrees F.

Take the chicken out of the refrigerator and wait for it to come to room temperature. While waiting for it to warm up, prepare the breading station. In 3 separate bowls put the following ingredients in each:  Bowl 1: flour; Bowl 2: whisked egg; Bowl 3: crushed cornflake breadcrumbs mixed with spices (dill to black pepper).

Place an oven-safe cooling rack on a baking sheet, or if you don’t have one, just cover a baking sheet with parchment paper. Then, start breading your chicken by dipping each strip into the flour, then dredging it in the egg and finally rolling it in the cornflake crumbs. Place the chicked strips on the cooling rack. Give all of the chicken fingers a quick spray of olive oil and place it into the oven until brown and crispy – usually for 15 to 20 minutes.

Serve and enjoy!
