Healthy Kidney Meals by Renalogic

 As part of our ongoing commitment to improving health and well-being for those diagnosed with chronic kidney disease (CKD) or those at high risk, we’re excited to share this recipe that is delicious and kidney-friendly.  

 We’re featuring Granola Bars. This recipe is designed to suit individuals at various stages of CKD, including those who have undergone a kidney transplant. It’s also great for people diagnosed with diabetes. Let’s dive in and discover how you can prepare this tasty and nutritious dish at home.  

 

Snack: Granola Bars 

 Total Preparation Time: 55 minutes 

Great for people with the following conditions: Diabetes, CKD Stages 1, 2, 3, 4, 5, Dialysis & Kidney Transplant. 

 Needed Ingredients: 

  • ¾ cup peanut butter, reduced sodium 
  • ¼ cup honey 
  • ½ cup packed brown sugar 
  • ½ cup corn syrup 
  • 5 tablespoons butter 
  • 2 teaspoons vanilla extract 
  • 3⅓ cups rolled oats 
  • ¾ cup pretzels, unsalted 
  • ¼ cup semisweet chocolate chips 
  • 10 caramel candies 

 

Preparation Instructions: 

  • Preparation Time: 30 minutes 
  • Cook Time: 25 minutes 
  • Preheat oven to 350 degrees F. 
  • In a large bowl, stir together peanut butter, honey, butter, brown sugar, corn syrup and vanilla until smooth. 
  • Add all the other ingredients: oats, pretzels, chocolate chips and caramels. Stir well. 
  • Press the mixture into a 13 x 9-inch greased pan. 
  • Bake for 20–25 minutes. 
  • Let cool on wire rack before cutting into bars. 
  • Cut into 1 x 4 ½ inch bars. This recipe should yield 26 bars.
