Healthy Kidney Meals by Renalogic

As part of our ongoing commitment to improving health and wellbeing for those diagnosed with chronic kidney disease (CKD) or those at high risk, we’re excited to share two new recipes that are not only delicious but also kidney friendly.

We’re featuring a hearty entrée of Mushroom Stew and Roasted Asparagus, followed by a delightful Apple Spice Cake for dessert. Both recipes are designed to suit individuals at various stages of CKD, including those who have undergone a kidney transplant. They are also great for people diagnosed with diabetes. Let’s dive in and discover how you can prepare these tasty and nutritious dishes at home.

Entrée: Mushroom Stew and Roasted Asparagus

Total Preparation Time: 1 hour 15 minutes 

Serving Size: 2/3 cup per serving

Great for people with the following conditions: 

  • Diabetes 
  • Chronic Kidney Disease Stages: 1, 2, 3, 4, 5 and kidney transplant 

Needed Ingredients: 

  • 1 asparagus
  • 1 oz. dried mushroom medley
  • 2 teaspoons of olive oil
  • 1 cup very hot water
  • 1 carrot stick
  • 2 celery stalks
  • 1 small onion
  • A ground black pepper to taste
  • 1 fennel (anise) head
  • 4 sprigs fresh thyme
  • A pinch cayenne pepper
  • 1 tablespoon fresh chopped parsley
  • 1 teaspoon dried sage
  • 1 tablespoon + 1 teaspoon dry Marsala wine
  • 1 bay leaf
  • teaspoon onion powder
  • teaspoon garlic powder
  • 2 oz. pine nuts
  • 2 cups vegetable stock (low sodium)

Preparation Instructions: 

Preparation Time: 45 minutes 

Cook Time: 30 minutes 

  • Start by preheating the oven to 400° F. Then wash and cut off the hard bottoms off the asparagus spears.
  • Using a baking sheet, place the asparagus spears into a single layer. Drizzle olive oil over the spears (1 teaspoon of olive oil should be drizzled on the spears). Then bake the spears in the oven for 10-12 minutes depending on how well cooked you want them. Then let the spears sit to cool. Then slice the spears into small 1–2-inch pieces.
  • Rehydrate the dried mushrooms in 1 cup of hot water.
  • Using a non-stick sauce pan, heat up 1 teaspoon of olive oil over medium-high heat and then add onions, diced celery, carrots and fennel and sauté until onions are translucent color. Continue by adding garlic powder, chopped parsley, cayenne pepper, thyme, dried sage, Marsala wine, bay leaf, onion powder, then keep stirring for 1 minute. Then add the liquid from the dried mushrooms, the vegetable stock, diced mushrooms, and let it simmer for 15 minutes.
  • Place the pieces of asparagus in the bottom of the dish, then add stew and add pine nuts over the top.
  • Serve the prepared entrée.

Dessert: Apple Spice Cake

Total Preparation Time: 1 hour 5 minutes 

Serving Size: 1 slice of cake

Great for people with the following conditions: 

  • Diabetes 
  • Chronic Kidney Disease Stages: 1, 2, 3, 4, 5 and kidney transplant 

Needed Ingredients: 

  • 3 Granny Smith Apples, peeled, cored & sliced
  • 1 yellow sugar-free cake mix
  • 3 egg whites
  • cup oil
  • ½ cup water
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 3 tablespoons maple sugar
  • ½ teaspoon ground cloves

Preparation Instructions: 

Preparation Time: 20 minutes 

Cook Time: 45 minutes 

  • Cut apples into slices and microwave until they become soft (about 5 minutes on high).
  • Pre-heat the oven to 350 degrees.
  • Let apples cool, while mixing the cake batter.
  • Using a mixing bowl, add the cake mix, egg whites, water, oil and spices; follow the mixing directions per the instructions on the cake mix box.
  • Mix in the sliced apples.
  • Pour the cake batter into a 9×13 non-stick cake pan.
  • Bake the cake for 35 to 45 minutes, until done (test using a toothpick, cake is complete when the toothpick comes out clean). Please note there is only a little sugar in this batter, so the cake won’t turn very brown.
  • Let the cake cool to room temperature.
  • Sprinkle maple sugar on the top of the cake.
