Meal, Salad or Side Dish: Pasta Salad

Total Preparation Time: 50 minutes

Great for people with the following conditions:

  • Diabetes
  • CKD Stages 1, 2, 3, 4, 5
  • Dialysis
  • Kidney Transplant

Needed Ingredients:

  • 2 cups cooked fusilli pasta
  • ½ small tomato (diced)
  • ½ red onion (diced)
  • ¼ cup olives (pitted and sliced)
  • ½ green bell pepper (sliced)
  • 1 cup cauliflower (chopped)

Preparation Instructions:

Preparation Time: 30 minutes

Cook Time: 20 minutes

Start by cooking pasta according to the directions on the box.

Drain the water from the pasta.

Add your desired vegetables.

Toss with your favorite low-fat dressing.

Serve and enjoy!
